Greek spinach pie "Spanakopita"
3 tbsp.of olive oil
1 onion
a bundle of green onions
2 cloves garlic
500 g of frozen spinach
1/2 cup of parsley
2 eggs
125 g of cottage cheese "Nadugi" TM Shchedryk
250 g of feta cheese or TM Shchedryk
8-12 sheets of flaky filo dough
50 g of butter TM Shchedryk
Preparation
Preheat oven to 180 degrees and grease with butter a square or round baking dish 24 * 24 cm. In a large skillet heat the olive oil over medium heat. Fry the finely chopped onion, green onion and garlic until golden brown. Then add the previously defrosted spinach and parsley and let them soften (about 2 minutes). Remove from heat and let cool weight (this is important). In a bowl, mix the eggs, cottage cheese and feta (or cheese) and add to the cheese mixture of spinach. In the the prepared baking dish lay out 1 sheet of dough and lightly grease with melted butter or olive oil, top with another sheet of dough, brush with butter and repeat this process until you do not get 4-6 layers. Grease with oil. Bake 30-40 minutes, until the pie is lightly browned.
