Thermostat method of production is one in which milk souring and ripening of dairy products takes place directly in the consumer packaging. To this the container (bags, buckets, cups) placed in the thermostat chamber, where they are kept in necessary temperature range for several hours.
The word "thermostat" means an environment with a fixed temperature within that maintains vital lactic microflora during a certain period proper fermentation. The duration of ripening process depends on the type of products manufactured and ranges from 3-10 hours at t 35-42⁰C.
This ensures the production of only natural products without added starch and preservatives.
